Pizza tarte flambée

“Tarte flambée” style pizza

Bright yellow gold color. Salty nose with candied lemon, pears, orchard fruits with enjoyable toasty notes coming from the barrel ageing. Same profile on the palate, the wine is dense with a round mouth feel, explodes on the finish where the wine is even more bold and persistant. Yes the oak is still there, but it pairs well with the wine’s structure and bring in roundness while not hidding its acidity or salinity. This wine was a perfect match to a “tarte flambée” style pizza. Excellent+ (92)

Made of chardonnay. Bottled after have spent 10 months in oak barrels. Alcohol level of 13%

Lighlty colored. Fine and subtle nose of lemon, pear and salty notes. Having the same low profile on the palate at first, air did helped the wine. The finish offered a good flavor concentration followed by a good acidity level. Flavors of lemon, pear, green apples and salty notes again. Good+ (88)

From a 375ml bottle. This wine comes from a plot located in the lieu-dit « LES CHARLEVAUX », between les Vaillons and la Côte de Léchet from 35 years old vines. Aged on lees in tanks for 6 months. Alcohol level of 12,5%

Is it a Great wine or a wine that was drinked at the perfect moment? I opened this bottle in a well planned moment; at the beach to pair the salty breeze of the ocean with the classic seashell feel of a Chablis!

Medium gold color. Nose showing finesse, saltyness, lemon and mineral notes. Bright flavors of green apples, poached pears, peaches, honey that brings some roundness to the mid-palate, then comes the salty notes with acidity in a great finish. The wine is ready and was opened at the perfect moment. Very good+ (90)

Made of Chardonnay. 25% of the wine is fermented then aged in oak barrels for 10 months. Alcohol level of 3%

Pale gold straw color. Nose of lemon, wet rocks, honey and flowers. Round on the palate with flavors of lemon, honey and flowers with that mineral and salty notes of wet rocks. The acidity kicks in in the finish that last in freshness. The kind of Chablis I like! Very good (90)

Made of Chardonnay from 55 years old vines. Aged in a mix of stainless tanks and concrete eggs. Alcohol level of 12,5%

Beautiful medium dark gold color. Powerful nose from bottle opening and only got prettier with more air. Rich fruit nose with citrus fruit, poached pear, spices and a gentle hint of oak. Typical salty and mineral Chablis aromas are also there, but in the background. Bright palate with good acidity and powerful salty, fruity, mineral flavors with again, just a touch of spices and oak. So long finish. Among the best white wine I ever had. Sublime (95)

Bought at a wine store in France by a friend since Dauvissat’s wines are not available around here. Merci Baptiste!
